It was one of those nights when my family wanted to order pizza and I was trying to watch my carb intake. Not exactly a great combination, though I love a good pizza!
Cauliflower crusts can be good, however they didn’t offer this on the menu where my family was ordering so I opted for creating something using the ingredients I had in my kitchen. Nothing fancy, and it took maybe 5 minutes to throw together. What did I make?
Tuna Taco Salad.
This is not a lettuce-based salad, but you get the idea.
I used a packet of tuna I had in my pantry, placed it in a skillet over medium heat and sprinkled a couple of teaspoons of taco seasoning on top. Added two teaspoons of water, and stirred until the tuna was coated.
Next, I added my favorite toppings: Boiled egg, avocado slices, pepper, and a squeeze of lime. You can eat it with a fork or pile it onto crackers and DINNER IS SERVED, my friends.
Nothing fancy, and it tasted great. The difference for me was warming the tuna over the stove mixed with the flavor of the taco seasoning!
