ONE POT TERIYAKI CHICKEN BOWLS

Quick & easy, throw it all together and relax!

INGREDIENTS:

1 lb. chicken, diced into small pieces

2 cups long grain rice, uncooked

3 tablespoons teriyaki sauce

3 1/2 cups water

Salt to taste

1/4 cup teriyaki sauce

3 tablespoons soy sauce

1/2 cup carrots, chopped

1/3 cup green onion, chopped

1/3 cup broccoli, chopped

1/3 cup peas, optional

INSTRUCTIONS:

  1. In a large skillet, cook chicken in 3 tablespoons teriyaki sauce until white on the outside. (Does not need to be fully cooked in center.)
  2. Add remaining ingredients, except broccoli and extra teriyaki sauce. Bring to a boil.
  3. Reduce heat and cover with lid. Simmer for approximately 20 minutes.
  4. Add broccoli, cover again, and simmer for 5 additional minutes. Be sure rice is cooked after 5 minutes.
  5. Spoon extra teriyaki sauce over the dish and serve immediately.
