Apple-Oat Bars
Serves 15 (1 bar per serving)

Ingredients:
Vegetable oil spray
1 cup uncooked quick-cooking oatmeal
1 cup whole-wheat pastry flour or all-purpose flour
2/3 cup firmly packed dark brown sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/4 teaspoon baking soda
White of 1 large egg
3 tablespoons canola or corn oil
9-ounce jar or 1 cup apple butter or other fruit butter
3 tablespoons sliced almonds (optional)


Directions:

Preheat the oven to 325°F. Lightly spray a 12x8x2-inch or 11 7 1 1/2-inch baking pan with vegetable oil spray.

In a medium bowl, stir together the oatmeal, flour, brown sugar, cinnamon, salt, and baking soda.

In a small bowl, lightly beat the egg white with a fork. Add the oil, stirring well. Pour over the oatmeal mixture. Using a fork, stir together thoroughly. Press half the mixture into the prepared pan.

Using a spatula, spread the apple butter over the oatmeal mixture. Sprinkle with the remaining oat mixture.

Bake until golden brown, about 25 minutes if using a 12x8x2-inch pan, about 35 minutes if using an 11x7x1 1/2-inch pan. Let cool in the pan on a cooling rack. Cut into 15 bars.


Cook's Tip

A 9-ounce bottle of fruit butter isn't quite 1 cup, but it works fine here. If the fruit butter is very thick, whip it up with a fork for easier spreading.
